1 1/4 cups sifted cake flour
1/2 cup granulated sugar
1 1/2 cup egg whites (about 12)
1/4 tsp salt
1 1/4 tsp cream of tartar
1 tsp vanilla
1/4 tsp almond extract
1 1/3 cups sifted white sugar

Directions:
Directions:
Have eggs at room temperature before using.
Use ungreased 10 inch tube pan.
Start oven for moderate heat 375 F.

Measure sifted flour, add 1/2 cup sugar. Sift together 4 times.
Combine egg whites, salt, cream of tartar and flavorings in large bowl. Beat with sturdy beater until moist soft peaks form. Add rest of sugar in 4 additions beating until blended each time.
Sift in flour mixture in 4 additions, folding in with large spoon each time.
Turn bowl often doing this.

Bake 35-40 minutes. Cool upside down, then remove cake from pan.

Elizabeth Kastl, my sister, wrote this recipe down from Grandma Anna Schroeder's recipe. It's amazing she used a sturdy beater to beat egg whites and not an electric mixer at high speed! All of us grandchildren remember Grandma's angel food cakes.
