* 2 boneless skinless chicken breasts
* 2 cups of uncooked baby spinach
* 4 strips of bacon( thin sliced preferred)
* 2 Tbsp honey or maple syrup

Directions:
Directions:
Preheat oven to 390*f.
With a pointed sharp knife, and the breast laying flat ,cut an opening in each breast. Cut all the way through and cut a slit through each breast leaving the breast connected at each end. Now stuff the spinach into each breast. Lay two strips of bacon on a cookie sheet and set the spinach stuffed breast on the strips and tightly roll the breasts to wrap them with bacon. Wrap them so the bacon seam side is on the bottom. Secure with toothpicks if needed.Repeat for each breast.
Put the bacon wrapped stuffed breast on an oven proof pan an drizzle with the honey or maple syrup.
Bake for 25 to 35 minutes or until the bacon is crispy.Baste with the pan juices once during cooking and once when removed from the oven If needed to help crisp the bacon, put the broiler on for the last couple of minutes. The chicken will be cooked when the bacon is crispy.
Serve with your favorite side dish.
Note:
1)If the bacon is thick sliced ,layer it on paper towels on a micro wave safe plate and microwave it for 2 minutes. Let it cool and use it in the recipe. This will prevent overcooking the chicken.
2) If desired you can skip the spinach stuffing and just wrap the uncut chicken breast with the bacon and follow the rest of the recipe.
3) Cover a small cookie sheet or baking pan with foil to aid in the pan cleanup after cooking.
