Ingredients:  
1 finely chopped yellow onion
4 diced plum tomatoes (remove seeds and "guts")
⅓ cup red wine vinegar
2 tbsp. olive oil
juice of 3-4 limes (to taste)
salt/pepper (to taste)
⅓ tsp. ground Cumin
⅓ tsp. Oregano flakes
¼ cup (or a handful) of chopped Cilantro

Optional: you can add chopped cooked shrimp for some variety

Directions:

Combine all ingredients in a large bowl. Add Cilantro last to preserve color and chill. Serve with tortilla chips.
