Ingredients:  
1 lb of light red kidney beans
1 lb of sausage (your choice of kine)
3 cans of chicken broth
3 cups of water
1 med onion
1 bell/green pepper
1 cup chopped celery
2 fresh jalapenos (opp)
1 tbs chopped garlic
2 bay leaves
Cajun seasoning to taste (Tony Chachere or Slap Yo Mama)
2 tbs chopped parsley
1 tbs Canola or Vegetable Oil

Directions:
Directions:
Wash and soak beans overnight or use quick soak method. Drain beans and put in large pot. Add chicken broth and water, bring to a boil, reduce heat and simmer approximately 1;30 to 2 hours. Add sausage, onion, peppers, celery, garlic, bay leaves, parsley, oil, and cajun seasoning. Bring to bil and simmer until tender. For thicker gravy, mash approximately 1/2 cup of beans through strainer and add back to pot and stir.

Serve over hot rice and with Beer Bread!

This is my own pieced together recipe. Often, I just throw the rice in with the beans when I add the other ingredients, you know, after the long cooking phase and it turns out beautifully!
