½ cup margarine/butter
2 T Flour
1 can chicken broth
2 jalapeño peppers, chopped
1 cup sour cream

Enchiladas

12 soft tortillas (flour or corn)
1 small onion
3 chicken breasts boiled and chopped
1 can green chilies
1 lb. Monterrey Jack Grated

Directions:
Directions:
Cook ½ cup butter, 2 T flour – add 1 can chicken broth, stirring until thick. Add jalapeno peppers and sour cream. Cook until hot – DO NOT BOIL.

Fill tortillas with cheese, onion, chicken and green chilies. Pour sauce over filled tortillas. Bake 350 deg for 20 minutes.
