1 plank of wood, soaked
½ # Brie wheel (large one from Costco)
2 heads of garlic, peeled
½ c. olive oil
2 Green Onions, fine chopped
1 Roasted Red Bell Pepper, finely chopped
2 T. fresh Thyme, fine chopped
2 T. Balsamic Vinegar
2 tsp. coarse Black Pepper

Scrape rind off top of Brie. Simmer garlic cloves in oil to soften (or roast), 20 minutes. Mash garlic w/fork. Add rest of ingredients. Season to taste. Mound on Brie.

Place soaked plank on grill. Close lid. Bake 10 minutes until plank is smoking & crackling. Place cheese on plank. Close lid. Plank-bake 10-12 minutes. Cheese begins to melt & bubble. Serve with crackers or bread.


Variations we have tried include mushrooms, sundried tomatoes, pizza. Feel free to vary herbs & veges.

You can microwave the wheel of Brie for a few minutes to be sure it melts enough.

Frugal hint. Buy a length of UNTREATED wood. Cut to size, leaving room for the "ooze".
