1 cup sliced almonds
3 Tbsp. red wine vinegar
⅓ cup olive oil
¼ cup fresh cranberries
1 Tbsp. prepared Dijon mustard
½ tsp. minced garlic
½ tsp. salt
½ tsp. ground black pepper
2 TBSP. water
1 tsp. sugar or sugar substitute
½ onion thinly sliced
4 oz. crumbled blue cheese OR feta cheese
1 11 oz. bag mixed salad greens

1. Preheat oven to 375º.
2. Arrange almonds in a single layer on a baking sheet. Toast in the preheated oven for 5 minutes or until nuts begin to brown.
3. In a blender or food processor, combine vinegar, oil, cranberries, mustard, garlic, salt, pepper, and water. Process until smooth.
4. In a large bowl, toss the almonds, onion, blue cheese, and greens with the dressing until evenly coated.
