24 vanilla wafers
2, 8oz pkgs cream cheese
1, 14oz can condensed milk
3 eggs, separated
1/4 cup lemon juice
1/4 tsp. salt
1 or 2 cans pie filling of choice

Directions:
Directions:
Heat oven to 275*. Put paper liners in muffin tins. Place wafer in bottom of each. Cream the cheese; add milk and egg yolks and beat until smooth. Stir in lemon juice. Beat egg whites and salt in small bowl until they form peaks. Fold into cream cheese mixture. Fill liners 3/4 full. Bake 20-25 minutes or until it springs back. Remove and chill before serving. Top each with one with desired pie filling. Must be refrigerated.

Yields 2 dozen.
