3 10oz Bags Fresh Spinach, washed and dried welll
1 lb Bacon
3.4 C Reserved bacon drippings
1/3 C Red wine vinegar
1 Lemon - juiced
4 T White Sugar
1/2 t Worcestershire Sauce
1/2 t Dijon Mustard
2 oz Brandy
3 Eggs (hard cooked)
1/4 C Toasted sunflower seeds or almonds

SALAD
1. Wash and dry spinach - remove stems
DRESSING
1. Fry bacon until crisp, drain off fat and reserve, chop into small pieces
2. Combine 3/4 C of reserved bacon fat with all the rest of the ingredients except eggs, almonds and brandy.


To Assemble
1. Break spinach leaves into small pieces - divide between 6 to 8 salad bowls
2. Decorate with slices of egg and toasted nuts
3. Mix the dressing in a skillet wth the chopped bacon until very hot.
4. Pour into a chafing dish and bring to the table vey hot.
5. Heat brandy in a small saucepan - pour it very slowly over the hot dressing and set it alight.
6. Pour about 3 tablespoons of the flaming dressing over each salad plate

Have made this many times - it looks great and tastes better. There is a problem getting the salad actually flaming to the table if you don't have a chafing disch.
