4 boneless, skinless chicken breasts
1 tsp. Italian seasoning
1/4 tsp. garlic powder
1/4 tsp. each salt and pepper
16 slices pepperoni
1 cup halved cherry tomatoes
1/2 medium onion, quartered and sliced
1 red or green pepper, quartered and sliced
2 zucchini, cut in 1" pieces
2 T. olive oil
1 cup shredded mozzarella cheese

Make 4 large squares of heavy duty aluminum foil. Place chicken in center of each square. Combine Italian seasoning, garlic, salt and pepper. Sprinkle chicken with mixture.
Top chicken with even amounts of pepperoni, tomatoes, onion, pepper and zucchini. Drizzle back packet with 1/2 teaspoon oil. Bring corners of foil together. Close edges loosely. Place on baking sheet. Bake at 400* for 30 minutes or until chicken is no longer pink and vegetables are done. Open each packet carefully and sprinkle with equal amounts of cheese. Close up packets. Serve.
