3 cups flour
1 tsp salt
1 tsp Instant yeast
1 T fresh or dry chopped rosemary (optional)
1 1/2 cups room temperature water

Stir dry ingredients, add water and stir with a fork just until it is incorporated...it will look shaggy. Cover in an airtight container 8-20 hours.
This takes 3 minutes to make!!!

The dough will rise and be bubbly. Using a floured spatula, drop the dough on parchment paper that is cut to fit in a dutch oven or cast iron pot. Cover the dough with the bowl it started out in and let rise 1 hour.
Preheat oven to 425, place your pot in the oven after the dough has been resting 30 min. Carefully transfer the dough holding the parchment paper and place in hot pot. With lid on, Bake for 30 minutes, remove lid and continue baking for another 15 minutes or a golden brown.
For a crispier crust, leave in oven with the door open and let cool in the pot. If you are anxious, place bread on a cooling rack.
We love this so much, I make it every other day!! It also makes great bread bowls.
