1 box (l lb.) lasagna noodles
1 large onion
2 cloves garlic peeled and chopped
1 ½ pound of hamburger (85% fat is good for this but you can use leaner)
1 ½ pound of hot sausage ( you can use sweet)
1 lb of ricotta
2 lb of mozzarella
3 eggs
1 cup parmesan ( I like using romano/ asaigo/ parm blend) I find the parm alone to be strong
tomatoe pasta sauce ( you can make your own - there is a good recipe in this book for that), or you can buy 2 jars. If you buy jars- watch the added sugar content as some can be too sweet. I like Classico or Newmans
1/2 C chopped Parsley ( I like the curley)

This recipe makes one jumbo large pan but really two smaller pans. the smaller pans allow one to be frozen and more even cooking

Cook the lasagna noodles. Add ºolive oil to water to keep from sticking. The key to non guey noodles is to keep it boiling and not let it sit. Yes, one box is enough. Drain and rinse when done. I like to drape the noodles over the edge of the pot or colander to they do not stick and stay in one piece. Do not overcook noodles

Dice the onion and chop the garlic. I like using a garlic press, but you can chop as well
Saute the onion and then add the garlic. Cook until soft. Remove from heat and put into a separate dish.
Cook the hamburger in the fry pan. Do not over cook. Drain and remove adding to onion/garlic
Cook the sausage in the fry pan and do not over cook. Mix in with other above mixture
Add these to the sauce. Save some plain sauce for bottom of the pan.

Make the cheese mixture. Beat the eggs add it to the ricotta and put in parmesan and parsley.

You now have 3 parts ready- noodles, sauce with meat, cheese.

Put a touch in olive oil in the bottom of the pans. put a small amount of meatless sauce in bottom. Layer noodles, sauce, cheese, Sprinkle some of the mozzarella, noodles, sauce cheese mixture. Put mozzarella on top. Bake at 325 º for about 40 minutes- watch to see when bubbly. Bake first half hour with foil on top and last 10 minutes without foil to lightly brown cheese.

Remove from oven and let rest. This allows the cheese to set and you will not have a runny mess when you go to cut it. Rest time should be 10-15 min or so. It will not get cold, trust me.

If freezing a tray you can not cook and then do that when thawed. Do not go from freezer to oven.

So this has a lot of steps but is so yummy. It is best to do in 2 trays. I often just buy a heavy duty foil lasagna tray from grocery store as you want something deep.
