3 c hash browns, frozen
¾ c Monterey Jack cheese, shredded
1 c ham, diced
¼ c green onions, chopped
4 eggs
1 can evaporated milk
¼ tsp salt
¼ tsp pepper

Directions:
Directions:
1. Place thawed potatoes in a greased 8 inch square casserole dish.
2. Sprinkle with cheese, ham, and onions.
3. In separate bowl, beat eggs, milk, salt, and pepper. Pour over potatoes in dish.
4. Cover and refrigerate for several hours or overnight.
5. Remove from refrigerator 30 minutes before baking.
6. Bake uncovered at 350º for 55-60 minutes or until a knife inserted near the center comes out clean.
