John's Jello Recipe

1 large pkg Jello, any flavor
1 c. pineapple juice, drained from a 20 oz can

1 c. cottage cheese, small curd
3 handfuls mini marshmallows
1 c. crushed pineapple, from the 20 oz can
1 c. whipping cream, whipped (or 8 oz. Cool Whip)
1/2 c. chopped nuts

Directions:

Boil Jello & juice for 2 minutes. Cool.

Combine remaining ingredients. Stir in chilled Jello.

Refrigerate until set.

To give credit where due this is Carolyn's Cottage Cheese Pineapple Salad.
It is required at all Reiter holiday tables, hence known as John's Jello.
Carolyn makes it with real whipped cream. TO DIE FOR! We cheat with Cool Whip because we are lazy. If you never had hers you won't know what you are missing.

I choose Jello flavor depending on what is on hand/what color I want on the table/whatever John requests.
