Ingredients:  
1 c bananas, mashed (about 3-4 overripe bananas)
¾ c sugar
2 eggs
⅓ c oil or apple sauce
1 c flour (white or whole wheat - it's super moist either way)
1 tsp baking powder
½ tsp baking soda
1 tsp cinnamon
½ tsp salt

Icing:
3 oz cream cheese
¼ cup butter
½ tsp vanilla
2 c powdered sugar

Directions:

1. Preheat oven to 350º.
2. Mix all the wet (first 4) ingredients together.
3. In a separate bowl, mix all the dry ingredients together.
4. Combine the wet and dry ingredients until everything is moist.
5. Pour in a greased 9x13 pan.
6. Bake for 20 minutes or until toothpick comes out clean when poked in the middle of the cake. Cool.
7. Mix icing ingredients in a bowl using a mixer.
8. Spread icing over cooled cake.
