2 T butter
¼ sliced mushrooms
2 cups cubed, cooked chicken (pieces should be fairly large)
¼ cup white cooking wine
¼ tsp salt
pinch of white pepper
1 cup half-and-half
3 egg yolks
hot cooked rice or noodles
paprika

Directions:
Directions:
1. Heat the butter in a skillet. Add the mushrooms and cook until almost tender.

2. Add the chicken, half the cooking wine, the salt and pepper and cook slowly until the mushrooms are tender.

3. Transfer the mixture to the top of a double boiler, add the half-and-half, and heat thoroughly over boiling water.

4. Add the remaining cooking wine. Lightly beat the egg yolks with a little of the hot sauce and add to mixture.

5. Cook, stirring, until thickened. Adjust the seasoning, if needed. Serve on rise or noodles and sprinkle with paprika.
