1 Frozen pie shell
6 bacon slices, cut into 2-inch pieces
⅓ cup onion or shallots
3 eggs
½ cup milk
½ cup heavy cream
1 cup Swiss cheese, shredded
½ teaspoon salt
⅛ teaspoon pepper
1 cup mushrooms, sliced
⅛ teaspoon nutmeg, fresh grated

Directions:
Directions:
1. Cook bacon until crisp. Drain; place in pie shell.
2. Saute onion and mushrooms in bacon fat until lightly browned. Drain off fat.
3. OFF heat, stir in eggs, milk, cream, cheese and seasonings. Pour into pie shell.
4. Bake in preheated 375 F oven 25 minutes or until a knife plunged into the custard comes out clean.

5. Serve hot, warm or cold.
