Ingredients:  
2 large russet potatoes, (cut into 1-inch cubes)
14 oz smoked sausage, (thinly sliced)
1 small onion, (chopped)
c. bell pepper red or green, (chopped)
1 clove of garlic, (minced)
c. chicken stock
1 tsp. paprika
tsp. salt and pepper
1 Tbsp. vegetable oil

Directions:
Directions:
1. In a large Skillet heat oil...add in the smoke sausage and cook, turning often till browned on edges.
2. Remove meat from skillet and add in the potatoes and cook over medium/ high heat till they begin to brown and become tender.
3. Add in onions, pepper and garlic cooking for about 5 minutes then add in the chicken stock and cover.
4. Cook for about 5 to 6 minutes, stirring occasionally. Remove cover and check potatoes for doneness. Add the spices and stir and add in the smoke sausage.
