Lebkuchen #2 Recipe

1/2 cup honey
1/2 cup molasses
3/4 cup brown sugar
1 egg
1 T lemon juice
1 tsp. grated lemon rind
2-3/4 cups flour
1/2 tsp. baking sod
1 tsp. cinnamon
1 tsp. cloves
1 tsp. allspice
1 tsp. nutmeg
1/3 cup chopped citron
1/3 cup raisins

Mix honey and molasses in saucepot; bring to a boil. Stir in sugar, egg, lemon juice and rind. Set aside. Mix dry ingredients and slowly mix in liquids. Mix in fruits. Chill dough overnight.

Preheat oven to 400. Roll out and cut into squares. Place on greased cookie sheet and bake 10-12 minutes. Cool and store in airtight container sliced apple for a few days to mellow.

Can top with sugar glaze.
