4 mahi mahi filets, approx. 6 oz. each
2 tbsp. butter
1 tbsp. olive oil
1 lemon

SPICE MIX
1-1 tsp. onion powder
1 tsp. garlic powder
1 tsp. smoked paprika
1 tsp. dried thyme leaves
1 tsp. dried oregano leaves
1 tsp. salt
tsp. pepper
tsp. cayenne pepper, or to taste

Combine all spice mix ingredients into small bowl.

Pat filets dry with paper towel. Season filets liberally with mix on both sides, pressing mix into fish.

Place a large pan over medium-high heat and add butter and oil. When hot, add fish. Cook, undisturbed for several minutes until golden brown on one side. Flip and continue cooking till fully cooked through.

Squeeze lemon juice over fish and serve.

Matt picked up mahi mahi filets once and I found this recipe, and oh man did we love it. Great flavor for any seafood lover.
