2 cup sugar
4 eggs (beaten)
2 cups flour
2 tsp baking soda
1 cup oil
3 cups grated carrots
1 tsp salt
2 tsp cinnamon
1/2 c ground coconut,
1/2 c chopped nuts
1/2 cup raisins

Frosting
1 8 oz. pkg. cream cheese, softened
1/4 cup butter
2 1/2 cup powdered sugar

Directions:
Directions:
Combine sugar and oil. Add eggs. Mix well. Add grated carrots. Slowly stir in dry ingredients. Add coconut,nuts, and raisins. Pour batter into greased cookie sheet. Bake at 400 degrees for 20 to 30 min. When cool, spread with frosting.


Frosting
Cream together cream cheese, butter, and sugar..Mix well. Add a little hot water if too thick.
