4 large egg whites, room temperature
pinch of salt
1 C. plus 2 Tbsp. super fine sugar
1 tsp. cornstarch
2 tsp. white wine vinegar
1 tsp. pure vanilla extract
1 cups heavy cream, whipped
10 passion fruits for serving (optional)
4 bananas for serving (optional)
Mixed berries for serving

Preheat oven to 300. Using an 8 inch bowl as a guide, trace the perimeter of the bowl onto a sheet of parchment paper and then turn the paper over. Place the parchment paper on a baking sheet. In Stand mixer using the whisk attachment, beat the egg whites and the salt together until glossy stiff peaks form. With the mixer running add the sugar in 3 additions, beating until stiff and glossy. Sprinkle in the cornstarch, vinegar and vanilla and gently fold into the egg whites. Mound the meringue into the center of the 8 inch circle. Gently spread the meringue evenly to the edges of the circle. Place in the preheated oven and immediately reduce the temperature to 250. Bake for 1 hour and 15 minutes. Turn the oven off and let the meringue cool completely. When the meringue is completely cool and dry, top with whipped cream and desired fruit.
