8 oz young spinach
2 large eggs hard boiled
8 slices bacon
3 T red wine vinegar
1 t sugar
t Dijon mustard
4 large white mushrooms
1 small red onion (very thinly sliced)
salt and pepper

Directions:
Directions:
1. Remove stems from spinach and wash. drain and pat dry. Place in large bowl
2. Boil the eggs and slice
3. Fry the bacon and drain on paper towel crumble
4 Reserve 3 tablespoons od rendered fat and set aside
5. Transfer the fat in a small saucepan set over low heat and wisk in the red wine vinegar, sugar, and mustard. Season
with a pinch of salt and black pepper.
4 Add the sliced mushrooms, egg, and sliced onion to the spinish and toss.
5. Add the dressing and toss to combine
