1 small poblano pepper
1/2 yellow onion, peeled and roughly chopped
2 garlic cloves, peeled
Juice of 1 lime
1/4 cup fresh cilantro
1/4 fresh jalapeņo, seeds removed
3 tablespoons extra virgin olive oil
1 pound mild white fish, skin discarded, cut into 1/2-inch dice
Course sea salt
Warm corn tortillas
-Guacamole
-Tomatillo Salsa
-Tomato + Chipotle Salsa
-Shredded red cabbage
-Pickled jalapeņos

Roast poblano over an open flame and rotate until pepper is soft but charred all over. Broil the pepper for about 15 minutes if no flame is available. Cover the pepper in plastic wrap to let it steam and then peel the skin once its cool. Discard the skin, stem and seeds. Rinse the pepper and blend along with the onion, garlic, lime juice, cilantro, and jalapeņo. Set the mixture aside.

Heat the olive oil in a large skillet over high heat. Add the fish to the pan and sprinkle with salt and pepper. Cook and stir occassionally until browned and flaky about 8 minutes. Turn off the heat and add the poblano mixture. Combine thoroughly and serve with tortillas and the toppings.

To save time simply add your favorite tomatillo and chipotle salsa.
