4-5 lbs Boneless Bottom Round or Chuck
4 cupsWhite Vinegar
2 Chopped Onions
4-6 Whole Bayleaves
20 Whole Allspice
Salt
Pepper

1 Box Ginger Snaps
2-3 cups water

Directions:
Directions:
Soak meat for 2 days in a large bowl with top ingredients, If mixture does not cover meat, you can either add more vinegar and onion or flip meat during the soak to evenly brine meat. Keep refrigerated. When ready to cook, add bottom 2 ingredients and simmer approx. 4 hours. Remove allspice and bayleaf. Gravy will thicken up from ginger snaps, stir occasionally to prevent sticking. Serve with dumplings and red cabbage.
