2 T. vegetable oil
1 cup chopped cooked ham
1 cup finely chopped onions
1/2 tsp. hot pepper sauce
2 cans black-eyed peas, undrained and heated
3 cup cooked rice
1/2 tsp. salt
chopped mustard greens

Directions:
Directions:
Heat oil in a large skillet over medium heat. Add ham, onions and hot pepper sauce and sauce 3 to 5 minutes until onions are tender but not browned, stirring often. Add black-eyed peas, rice and salt. Reduce heat to low, cover and cook 5 minutes until heated through. Garnish with mustard greens.
