4 tablespoons butter or margarine
1-1/2 cup ham, cubed
1 cup polska kielbasa, cubed
1 cup onion, chopped
2 stalks celery, chopped
1-1/2 tsp. garlic, minced
2 cup rice, uncooked
2 cup tomato sauce
4 cup chicken stock
1-2 T. Creole or cajun seasoning, more or less to taste.

Melt butter over medium-high heat in dutch oven. Add ham and sausage. Cook about 5-7 minutes, stirring occasionally. Add onions, bell pepper, celery and garlic. Stir well and cook until browned, about 10 to 12 minutes, scraping bottom of pan well. Stir in rice, cook for 5 minutes. Add tomato sauce and creole seasoning. Stir well and cook 5 minutes. Add stock, stirring well. Bring to a boil; reduce heat, cover and simmer until rice is tender, about 20 minutes, stirring occasionally.
