1/4 cup olive oil
2 large onions, chopped
2 cloves garlic, minced
1 large green pepper, chopped
12 cups fresh tomatoes, peeled and chopped
3 (6 oz) cans tomato paste or more
3 Tbsp. sugar
1 Tbsp. salt
3/4 tsp. pepper
3 Tbsp.oregano
2 - 3 bay leaves

Heat oil i large kettle and cook onion, green pepper and garlic until tender. Add remaining ingredients; stir well.
Simmer, uncovered for 45 - 60 minutes. Remove bay leaves. Meatballs and or sausage may be added now: cook for 30 minutes more. Serve and enjoy.
This sauce freezes well.
