1 Pound of lean ground beef
3 tablespoons of dried chives
2 tablespoons of dried parsley
teaspoon of powdered beef bouillon
teaspoon black pepper
1 teaspoons of Worcestershire sauce
2 tablespoons of yellow mustard
1/4 cup of ketchup
1 package of brown gravy mix
1 cup Italian bread crumbs
cup milk

Directions:
Directions:
Place ground beef in a large mixing bowl. Add all of the ingredients on top and mix well by hand. Make approximately 1 inch rounded meatballs and place them on a cookie sheet. Bake at 400 for 40 - 45 minutes. This makes the outside of the meatballs toasty. Cool for a few minutes before using a spatula to remove the meatballs from the cookie sheet.

This is an original homemade recipe prompted by my goal to make a tasty meatball without using onions or eggs (the combination can be a digestive challenge!). This is the resulting recipe that has become a family favorite. My children (Jimmy, Joesie, and Jaime) and I prefer the meatballs well done. If this is not your preference, feel free to reduce the cooking time.

The meatballs can be added to tomato sauce or a stew (see Grandpa Stew recipe). A typical dinner for us is to have the meatballs with brown gravy served over egg noodles.

The recipe easily doubles for twice as many tasty meatballs!
