Bread:
1 cup mashed bananas
1 cup white sugar
1 cup brown sugar
2 eggs
1 cup buttermilk
½ cup shortening
2½ cups flour
1 tsp soda
½ tsp salt
1 tsp vanilla

Icing (optional):
1 cup coconut
⅔ cup brown sugar
4 tbsp melted butter
4 tbsp cream

Directions:
Directions:
Mix sugars and shortening until light and fluffy. Beat in one egg, half the dry ingredients, the other egg, the buttermilk, then the remaining dry ingredients. Stir in vanilla and bananas. Bake 325º for one hour.
Mix icing and spread over bread AFTER IT IS DONE. Run under the broiler until brown.

As children, we didn't mind not eating all the bananas because we knew if we didn’t eat them, Mama would make banana bread when they got over-ripe! That’s what we wanted in the first place.
