1 bag of brown lentils
2 large boxes of vegetable broth
1 package of Sweet Earth vegan bacon-cut into pieces
1/2 cup of thinly sliced carrots
2 celery stalks
3 Bay leaves
1 package of Smoke Gouda-grate and use for topping
1/2 cup of diced onions
2 tablespoons of olive oil
4 garlic cloves

Heat skillet with olive oil on medium low. Fry vegan bacon in pot for about 10 minutes. Take bacon out and put it aside. Cut bacon into small pieces once it has cooled down. Get a medium size pot and boil vegetable stock-use both boxes. Pour lentils, olive oil, and bay leaves in pot and Cook on medium heat for approximately 1 1/2 hour. Add bacon, carrots, onions, celery, garlic and seasonings and continue to cook for 45 minutes until lentils is soft. Top off with grated smoke gouda, serve and enjoy!

*Soak lentils-over night*
*If broth cook out of lentils you can add more broth or water to keep it at a soup consistency*
