6 tbsp. butter
1 1/2 c chopped celery
1 medium chopped onion
6 tbsp. flour
1 tsp salt
few grains pepper
3 c milk
1 can undiluted cream of mushroom soup
4 c diced cooked turkey (ham or chicken)
3 tbsp. minced pimento
1/4 tsp dried basil
3 tbsp. sherry
1/2 c grated sharp cheese
sprig parsley

Directions:
In large saucepan sauté celery, onion, until just tender. Stir in flour, salt and pepper. Add milk. Cook Stirring constantly until sauce is thick. Add soup, turkey, pimento, basil and sherry. Taste and add more seasoning if needed. turn into a 2 quart casserole and top with cheese. Bake uncovered at 350ºF for 1 hour. Garnish with parsley. This can be made early in the day or the day before if needed. Serve with Herb Rice.
