2 cup flour
2 cup sugar
2 teaspoon baking soda
2 teaspoon cinnamon
1 cup vegetable oil
3 large eggs
2 teaspoon vanilla
1-1/3 cups pureed cooked or canned carrots
1 cup chopped walnuts
1 cup coconut
1 can (20 oz) crushed pineapple, well drained

ICING:
4 ounces. cream cheese at room temperature
3 Tablespoon unsalted butter at room temperature
1-1/2 cups powdered sugar
2 teaspoon lemon juice
½ teaspoon vanilla

Heat oven to 350. Grease a 13x9-inch baking pan. Line bottom with waxed paper and grease paper.

Mix flour, sugar, baking soda & cinnamon in a large bowl. Add oil, eggs and vanilla. Beat with an electric mixer or wooden spoon until well blended. Stir in remaining ingredients until blended.

Pour into prepared pan and bake 55 to 60 minutes until cake pulls away from sides of pan and a pick inserted near center comes out clean. Cool in pan 10 minutes then turn out on rack and cool completely.

ICING:
Beat cream cheese and butter with a mixer until well blended. With mixer on low speed add sugar, lemon juice and vanilla. Increase speed to medium until smooth. Frost top and sides of cooled cake. If you really like icing, double the recipe. I personally always double it.

You may garnish by sprinkling with toasted coconut.

I believe this is the best carrot cake I have ever eaten. I occasionally bake cakes for other people. When living in Denver,I made this cake for someone's birthday. I always found that the quickest way to cool off a cake was to put it out on the deck. While this one was cooling, Chad looked out the window and said there was a squirrel on the cake. Not only was he partaking of the cake, he refused to move until I was close enough to knock him off. He had eaten a circle out of the top of the center of the cake and there was no time to make another. I scraped off the surface, put the eaten side down on the cake board, iced and delivered it as there was no time to make another. God forgive me.
