1/2 cup olive oil
1/2 cup of finely diced red onion
juice of 2 lemons
5 cloves of garlic, minced
4 tbsp chopped fresh cilantro
3 generous tsp of roasted ground cumin
2 tsp crumbled bay leaves
2 tsp paprika
1/2 tsp ground tumeric
1 block of tofu cut into 6-9 cubes, be sure to dry thoroughly first

combine all ingredients. Mix well and store, refrigerated, in an air tight container. Grill or bake until browned on all sides.

Serve with rice and vegetables
