6. lb fresh red peppers. hot Or sweet,
your choice
1/2 cup salt
3/4 oliv oil
3 tbs sugar
1 lb dried red pepper flakes. hot Or
sweet.

Cut the red bell peppers in half core and clean it from the seed and trim away the ribs and the stems.
In a large plastic tub place the clean core red peppers in the tub sprinkles the salt on top for one hour.
Take the salted peppers from the tub with out the extra water add it to a food Processor with the sugar, oil, dried red flakes pepper and blend until smooth.
Transfer to a large saucepan and simmer for about, 1 hour to 1 hour and half and stir frequently for the peppers do not stick to the bottom of the pan and until the mixture is thick and reduced.
Cool it then place it in a zip lock bags to restore it in the freezer until you need it.
Used this paste when call for recipes.
