4 cups old-fashioned rolled oats
1 cup coarsely chopped pecans or walnuts
1/2 cup raw pepitas (hulled pumpkin seeds)
1/2 cup dried, unsweetened coconut (sweetened is also fine)
1/2 cup hemp hearts (optional)
1 tsp fine sea salt or 3/4 tsp table salt
1 generous tsp ground cinnamon
1/2 cup melted coconut oil or extra-virgin olive oil (I like a mix)
1/2 cup real maple syrup or honey (I like to use 1/4 cup of each)
1 tsp vanilla extract
1/2 cup dried cranberries (or other dried fruit)

1. Preheat oven to 350 F. Line a large-rimmed baking sheet with parchment paper. In a large bowl, combine oats, pecans, pepitas, coconut, salt, and cinnamon. Stir to combine.

2. Pour in the oil(s), maple syrup and/or honey, and vanilla. Mix well, until every oat and nut is lightly coated. Pour the granola onto the prepared baking sheet and spread it into an even layer. Bake until golden (21-23 minutes) stirring halfway through.

3. Let the granola sit on the pan and cool completely. (It will crisp up as it cools.) Mix dried fruit with granola once mostly cooled. Store in an airtight container. Also freezes well.

This goes great with fruit and yogurt.

Note: You can change which nuts, spices, and dried fruit you use to suit your own tastes!
