Personal Notes:
Our family has a long history of making homemade mayonnaise and we keep doing it in spite of the apparent risks. However, if you grew up eating eggs out of an enormous wire basket in your grandfather's pantry, you can be excused for being a bit cavalier. I don't serve this at big parties, however.

Our original recipe came from my uncle Marion Simmons (husband of Nell Mealing). It was made in a mixer, and took a lot of care. I now make it in the blender and this is the recipe that came with an Osterizer I had years ago. The Tabasco may be my addition.

This mayonnaise makes a great base for Tartar Sauce.
