Ingredients: 8 potatoes, cleaned, peeled and quartered 2 T. sour cream or ¾ c. milk 6 T. butter ⅓ c. half and half 1 T. sugar 1 ¼ T. salt 3 c. flour

Directions:1. Fill a deep pot with water and bring it to a boil. Add the potatoes and ¼ T. salt and boil for 20 minutes until the potatoes are easy to split with a fork. 2. Drain the water and smash the potatoes, stirring in the sour cream or milk at the same time. Set the mixture aside. 3. In a saucepan over medium heat, melt the butter and mix with the half and half. Add the sugar and the remaining salt. 4. Stir the butter mixture into the mashed potatoes. Add the flour. 5. Roll the potato mixture into medium-sized balls and place these balls on a tray in a refrigerator for half an hour to cool. 6. Work with one ball at a time, use a rolling pin to roll out each ball until it is the size of a dinner plate. 7. On a hot griddle or frying pan, cook each side of your lefse for about a minute. (No need to grease your pan. Theres enough butter in your lefse to prevent it from sticking to the griddle.) |

Notes: Lefse is a traditional Norwegian flatbread. Norwegian immigrants brought lefse to Minnesota in the 1800s. Easy and fast to cook, lefse can be eaten in a variety of ways. Try rolling some meat inside or just have it with jam and butter.
