Carrot Cake

4 eggs
¾ cup vegetable oil
½ cup applesauce
1 cup white sugar
1 cup brown sugar
1 Tbsp. vanilla extract
2 cups all-purpose flour
2 tsp. baking soda
2 tsp. baking powder
½ tsp. salt
1 Tbsp. ground cinnamon
1/4 tsp. ground nutmeg
3 cups grated carrots
1 cup crushed pineapple
1 cup chopped pecans

Preheat oven to 350º. Grease and flour two 9-inch pans. In a large bowl, beat together eggs, oil, applesauce, white sugar, brown sugar and vanilla. Mix in flour, baking soda, baking powder, salt, cinnamon and nutmeg. Stir in carrots and pineapple (squeeze out most of the moisture in the pineapple first). Fold in pecans. Pour even amounts into the two prepared pans.

Bake in the preheated oven for 40 to 50 minutes, or until a toothpick inserted into the center of the cake comes out clean. Let cool in pan for 10 minutes, then turn out onto a wire rack and cool completely.
 

Cream Cheese Frosting

1 cup butter, softened
16 oz. cream cheese, softened
7 cups confectioners' sugar
1 tsp. vanilla extract
1 cup chopped pecans (optional)

To Make Frosting: In a medium bowl, combine butter, cream cheese, confectioners' sugar and 1 teaspoon vanilla. Beat until the mixture is smooth and creamy. Frost the cooled cake. Decorate with chopped pecans on the sides of the cake if desired.
