Dave's Hot Peppers in Oil Recipe

Ingredients: 1) 2 pecks of Hungarian hot wax peppers 2) 1 peck of Jalapeņo peppers 3) 1 to 2 cups garlic chopped 4) salt, pepper, Italian seasoning to taste 5) water and vinegar to fill bucket (approx. 2 gals. vinegar) 6) approx. 2 gals. canola oil 7) approx. 12 wide mouth pint jars 8) (1) 6 gal. bucket
* ratio is two pecks Hungarian wax peppers to one peck Jalapeņo peppers (or use any peppers you choose)
* cold pack system - no need to boil jars -- wash in the dishwasher before using*

Directions:Cut peppers 1/4 inch thick.
After peppers are cut place in a six gallon bucket. (I use a wine juice bucket) Sprinkle with 4 to 6 tbsp. of salt and add 2 cups of water for every cup of vinegar until the liquid is to the top of the bucket. Cover with lid and let sit 3-4 hours.
Drain all liquid from peppers and let sit 3-4 hours in colanders weighed on top so they drain. (I put a cutting board on top and put the gallons of canola oil on top Best to do this outside.
Once the peppers are drained, mix them in a food safe container with some oil and seasoning mix.
Place peppers in jars with 1-2 tbsp. of garlic and one tsp. of salt (add more seasoning then add oil) Tap the peppers down into the jar with a knife and as they settle add more oil until the it reaches the top of the jar .Seal and place in refrigerator. Let sit for approx. a week so before you eat them. |

Notes: I make over a hundred jars so it is an all day process,however if you want to make a dozen or so at a time it will be less time.I have friends come over and they make them with me.
