4 tbsp. butter or margarine
4 tbsp. all-purpose flour
1½ tsp. salt
⅛ tsp. pepper
2 cups milk
6 large potatoes
1 large onion, chopped or sliced thinly

Directions:
Directions:
In medium saucepan melt butter. Stir in flour, salt and pepper. Add milk. Stir constantly until boiling or it thickens. Remove from heat.
Peel potatoes, slice thinly. Cut onions and layer half of potatoes and onions in a 2 quart (1.5 litre) casserole. Pour half the sauce over. Layer rest of potatoes and onions on top. Cover with rest of sauce. Bake covered in 350º oven for 50 minutes. Uncover and bake another 15 minutes or until potatoes are tender.

This recipe is a staple at our McPherson family Christmas. It is also good with 1 or two cups grated cheese mixed in to the mixture.
