2 eggs, well beaten
1 cup sugar
1 cup flour
1 teaspoon baking powder
1/8 teaspoon salt
1 teaspoon vanilla
1/2 cup boiling water
Chopped peanuts
Powdered sugar Frosting

Directions:
Directions:
Beat eggs,mix in sugar, beat well. Add vanilla. Combine dry ingredients,add to creamed mixture. Mix in the boiling water. Bake in 9x9 pan in 350º oven until springs back when lightly touched. Cool.
Cut in squares. Roll in powdered sugar frosting then into chopped peanuts.

This one was in Grandma Chapman’s box but I also remember mom making these. Some people call these Blarney Stones” but to us they were always peanut squares. The photo was taken during Mom and Dad’s 50th wedding anniversary celebration.
