Juice from no.2 can of chunk pineapple
2 eggs
1/2 cup sugar
2 tablespoons flour
Pinch of salt

1 cup whipping cream, whipped
Pineapple chunks from drained can
2 cups mini marshmallows
2 cups seedless grapes

Directions:
Directions:
In saucepan heat the pineapple juice. Mix in sugar, flour,salt. Add eggs last. Cook and stir until thickened. Remove from heat and let cool. Beat whipping cream. Blend into cooled cooked mixture. Add the pineapple chunks,marshmallows,and grapes. Refrigerate 24 hours to blend the flavors

Mom would make this for holiday meals. I can still picture it sitting in the middle of our Christmas dinner table. Growing up we hosted the family Christmas dinner in our basement. Always a good family memory. Dad wrote about Christmas in his life story “one of my best memories is every Christmas Eve, Dad would get Grandpa and Grandma Chapman and bring them to the house for supper. We would have oyster stew and homemade rolls. After supper Grandma would go out to use the toilet-that was when Santa Claus would come with gifts-Grandma always missed him. The best gift I ever got was a red Ryder lever action BB gun.” The tradition of having oyster stew on Christmas Eve continued on throughout my childhood. I can remember that I picked out the oysters and only enjoyed the broth. We went to church on Christmas Eve and when we got home, Santa had arrived.
