10-12 small red potatoes
1 carrot, grated
1 rib of celery, finely chopped
¼ onion, finely chopped
2 tbsp. margarine
1 tbsp. bacon drippings
1 tsp. flour
1 14 oz. can of chicken broth
1 c. milk
chopped green onions to top, if desired
salt and pepper to taste

Directions:
Directions:
Steam potatoes until tender. Peel and cut into bite size pieces. Sauté carrots, onion and celery in margarine until tender. Stir in flour and bacon drippings. Pour in chicken broth and milk, and stir until smooth. Add potatoes and stir until mixture is lump free. Heat until almost boiling but not boiling. Serve topped with shredded cheese and chopped green onions.
