Grandma Chapman’s Rubarb Pie Recipe

Ingredients:  
Ingredients:  
3 cups rubarb cut into small pieces
2 eggs beaten
1 cup sugar
1 heaping tablespoon flour
1/4 teaspoon nutmeg

Pie Crust
3 cups flour
1 cup lard
1 egg
1/2 teaspoon salt
1 teaspoon vinegar
6 tablespoons cold water

Directions:
Directions:
Preheat oven to 425º
Pie Crust
Cut flour and lard together.
Beat egg,salt and vinegar
Blend into flour mixture
Gradually add in cold water until ball forms
Roll out into single pie crust

Mix filling ingredients together. Pour into crust.

Bake at 425º for 15 minutes
Then at 350º for 30 minutes

Grandma always tested doneness by inserting bread knife and if it came out clean then it’s done. In the picture is Grandma Chapman, Aunt Gen, Aunt Elmie and I don’t know who the other lady is. This was taken when Grandma was Living at the nursing home.
