2 c. flour
2 tsp. baking powder
1 1/2 tsp. soda
1 tsp. cinnamon
2 c. sugar
1 c. vegetable oil
4 eggs
2 c. grated carrots
8 1/2 oz can crushed pineapple
1/2 c. walnuts, chopped

Topping :
1/2 c. softened butter
8 oz. softened cream cheese
1 tsp. vanilla
1 lb. powdered sugar

Directions:

Mix flour, baking powder, baking soda, cinnamon. Add sugar, oil, eggs and mix well. Add carrots, pineapple and nuts. Turn into greased and floured 13 x 9 inch pan.
Bake at 350 for about 45-50 minutes or until done (timing is questionable). Use the toothpick method to make sure the cake is done in the middle.
Cool and frost with topping mixture.
Topping mixture - beat together the butter, cream cheese and vanilla until smooth and lumps are gone. Add powdered sugar and beat until smooth. Spread over cake.

This was my Mom's recipe and one that Paula and I love. My Mom was not a great cook, but this is one of the things she made that was really good!
