1/2 yellow onion
1/2 oz basil
6 oz sweet Italian Pork Sausage
1 t. Garlic Powder
1 t. dried oregano
14 oz crushed tomatoes
1 chicken stock concentrate
9 oz cheese tortellini
5 oz baby spinach
1/4 c. parmesan cheese
1 t. chili flakes

Directions:
Wash and dry all produce. Dice onion, pick basil leaves from stems. Heat a large drizzle of olive oil in medium pot over medium-high heat. Add sausage, breaking up meat into pieces. Cook, tossing until browned, 4-5 minutes. Add onion, garlic powder, chili flakes and oregano to pot. Cook tossing until softening (2-3 minutes). Add tomatoes, stock concentrate and 2 1/2 c. water to pot. Stir, scrape browned bits from the bottom and bring to boil. Season with salt and pepper. Once boiling, add tortellini. Let cook until tender about 8 minutes. Stir spinach and half the basil into pot. Season with salt and pepper. Serve soup with basil and parmesan.
