Ingredients: 1) half rack of St Louis ribs ( or baby back) 2) 1/2 lb. to 1 lb. sweet or hot rope sausage 3) 1 lg. onion 4) 4-5 cloves of garlic 5) 2 bay leaves 6) salt and pepper to taste 7) Italian seasoning to taste 8) 1 stick unsalted butter 9) 2 tbsp. sugar 10) 1/2 c. tap water & 1/2 c. red wine 11) parsley to taste ( dry or fresh) 12) add a little extra dry basil or fresh 13) 1 lg. can of Tomato Magic (lg. can is 6 lbs. 10 oz.) or any crushed tomatoes 14) 1 28 oz. can of San Marzano tomatoes (take out of can and squish with hands) 15)) splash of olive oil 16) pinch of hot pepper flakes

Directions:1) Chop onion and garlic and saute in the butter and olive oil in a dutch oven. 2/Add pepper flakes and cook until onions are translucent. 3)Add garlic and cook a few more minutes. 4) Add tomatoes and remaining wet and dry ingredients, and stir to combine. 5) Cut the ribs into single pieces and braise in olive oil on each side in a separate pan and place in sauce. 6) Cut sausage into 3 in. pieces and braise on all sides in same pan used for ribs and add to sauce. 7)Add a few tbsp. of olive oil from braised meats to the sauce. 8)Cook sauce for 3-4 hours. 9) Make sure to remove all bay leaves before serving. 10) ** substitute meatballs for one of the meats or braciole can be added. ***The more meat added the less sauce you will have*** |
