1 lb. bacon cooked and crumbled
4 green onions chopped
1 Tbl. olive oil
6 oz. cheddar cheese
1 C sour cream
1/2 C mayonnaise, or plain Greek yogurt
1 C sour cream
5 lbs. unpeeled, russet gold or red potatoes - medium slices

Boil potatoes until tender. Cool. mix all ingredients and fold into potatoes. Garnish with a few green onions and bacon.
