4 cups chopped rhubarb
1 1/3 cup sugar
3 - 6 Tbsp flour
1 Tbsp butter
2 pastry 9 inch pie crusts
1/2 tsp ground cinnamon

Directions:
Directions:
Preheat oven to 450º. Combine sugar, flour and cinnamon and sprinkle about a quarter of it over the bottom of the pie crust. Add the rhubarb and sprinkle the rest of the sugar & flour mixture over it. Dot with butter and cover with other crust. Place on the lowest rack and bake 15 minutes. Reduce heat to 350º and bake an additional 40-45 minutes.
